During the colder months, many of us look for ways to stay balanced, nourished, and connected to the rhythms of the season. One of the simplest and most comforting winter preparations is infused honey — a traditional way to draw the supportive qualities of herbs into a delicious, shelf-stable infusion.
This Rosemary Honey Infusion is fragrant, grounding, and gently stimulating. It can be used in teas, added to warm water, drizzled over foods, or enjoyed by the spoonful. With just a few ingredients and a little patience, you can create a beautiful winter tonic that supports both body and spirit.
🌿 Rosemary Honey Infusion Recipe
Ingredients:
2 cups unfiltered honey
½ cup fresh rosemary leaves, coarsely chopped
2 whole rosemary sprigs
1 clean pint jar
Chopsticks or their equivalent
To Make:
Prepare the Rosemary
Rinse lightly if needed, then let the rosemary dry completely. Water and honey don’t mix well — dryness is essential.
Fill the Jar
Place the chopped rosemary and sprigs into the jar.
Cover with honey, filling to just below the rim.
Stir to Release Air Bubbles
Use a chopstick or similar tool to gently stir and ensure all rosemary is fully submerged.
Infuse in a Warmish, Dark Space. The honey will infuse in cooler weather, but it takes more time. Heating honey above ~100 degrees Fahrenheit destroys the health benefits so warm is good, hot is not.
Store the jar in a warm cupboard or closet.
Stir once a day for 1 week, topping off with extra honey if the rosemary rises above the surface. Keeping the rosemary covered with honey prevents mold from forming.
Let It Rest
After a week of daily stirring, allow the honey to sit for 2 more weeks.
Taste at the 3-week mark. For a stronger, resinous flavor, infuse longer.
This slow infusion results in a richly scented, deeply herbal honey ideal for winter wellness.
